* Cactus & Quail with Noodles

4 or 5 quail 2 cups diced blanched cactus 1 medium onion

(split in half) 1 pkt Ramen Noodle soup (chicken) 3 cloves garlic

1 tsp ground cumin salt/pepper (to taste) Rotel or diced tomatoes

fresh cilantro sprigs

Place quail & diced onion in pan with a cup of water. Add salt/pepper and minced garlic. Cover pan and cook at medium heat for 20 minutes. Add ground cumin and cactus and tomatoes. When quail are tender, add Ramen noodles & spice packet. Add cilantro. Cook three more minutes. Serve.

 Note: More water may be added as needed to keep dish from getting too dry.
