CACTUS COCKTAIL

 1 lb boiled and peeled shrimp

1 bunch green onions

½ red onion

½ cup lime juice

1 Tbsp. Canola oil

1 Tbsp. vinegar

2 cloves garlic

1 tsp. salt

2 Tbsp. Cilantro

2 avocados

1 tomato

1 cup diced fresh nopalitos

 Dice garlic and lightly cover with salt. Mash garlic and salt to make a paste. Combine garlic paste, oil, vinegar and lime juice. Dice green onions and onion tops into thin slices, combine shrimp and garlic oil mixture. Cover and place in refrigerator several hours ahead of serving time stirring occasionally. Dice avocados, red onion, tomatoes and cilantro. Dice nopalitos and set aside separately. Just before serving, combine all ingredients except nopalitos and stir well. Add nopalitos, toss lightly. Squeeze juice of lime over top and serve. Garnish with lime slices.
